Marinated Veggie Salad

Marinated Veggie Salad

Ingredients:


Hearty veggies coursely chopped (chunky)
1- Red Onion
1- Peeled zuchinni
1-2 - Red bell peppers
1-2 - Peeled carrots
3-4 - Tomatoes
4 - diced garlic cloves
Extra Virgin Olive Oil... cold pressed if possible
5 Tbl. Balsamic Oil
Salt and pepper to taste.

In a large bowl, put all of those gorgeous chopped veggies.

Oops, I almost forgot the garlic!

Don't look at my cutting board.. I just did some serious chopping on that.. it's not so purdy right now :)

Toss the chopped garlic on top of the veggies.

Drizzle the olive oil over the veggie mix... I like to get my hands in there and toss it gently.

Make sure your veggies are nice and shiny... no need to have a pool of oil on the bottom of the bowl, just shiny happy veggies :)

Next add your Balsamic vinegar... I tried to measure this out... try 5 Tbl. at first.

Toss again... I use my clean hands, but you can use some big spoons also.

I like my salad really wet, so I added more then 5 Tbl.
But just eye ball it and add it until there is a good amount of balsamic coating your veggies, as well as pooling at the bottom of the bowl.
We want those veggies to soak in that and just get more and more flavorful as the wait for you to come and eat them!

Then salt and pepper the veggies to taste! And again toss to coat all the veggies.

I like alot of salt and pepper.. so add what you like to it!

And that's it!

Eat and enjoy! Or serve with some cottage cheese... but you can eat it with tortilla chips or pita chips...
